Follow these simple steps to create your delicious Gouda & Mushroom Stuffed Chicken:

1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Prepare Filling: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
3. Add Mushrooms: Add the finely chopped mushrooms to the skillet. Cook until the mushrooms release their moisture and become tender. Season with thyme, salt, and pepper.
4. Mix in Cheese: Remove the skillet from heat and stir in the shredded Gouda cheese until melted and well combined. Set aside to cool slightly.
