2. Prepare the Squash: Cut the butternut squash in half lengthwise. Remove the seeds and stringy insides. Brush the cut sides with olive oil and sprinkle with salt and pepper.
3. Roast the Squash: Place the squash cut side down on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until tender.
